Quinoa Salad

Combine the following:

1 c. cooked quinoa

1 c. tomatoes, diced

1 c. cucumber, diced

1 c. green onions, chopped

1 c. parsley, chopped

1 c. cooked garbanzo beans

¼ tsp. black pepper

½ c. olive oil

¾ c. lemon juice

3 cloves crushed garlic

1 tsp. dry mint

1 tsp. salt

Serve cold.
