Whole Wheat Pancakes or Waffles

¾ cup whole wheat flour

¾ t. baking powder

Dash salt

1 T. olive oil

1 T. honey

½ cup milk or water

1 egg

Stir flour, baking powder, and salt together in medium mixing bowl. Measure oil, honey, and milk into a non-metal measuring cup or small bowl and mix. Heat in microwave briefly (about 30 seconds) to soften honey, and mix well. Add egg to liquid ingredients and mix.

Add the liquid ingredients to the dry mixture and mix well, using a whisk if necessary. Pour by spoonfuls onto medium hot griddle. Makes about ten 4-inch pancakes.
